Ingredients for 35 balls
~ 240g red beans (one can)
~ 1 glass of quinoa
~ 1 1/2 glass of water
~ 70g tomato paste
~ 1 slice of bread
~ 3-5 tablespoons finely chopped parsley
~ 1 teaspoon of thyme
~ 1 clove of garlic
~ 1 teaspoon of honey
~ 1 teaspoon of hot pepper sauce
~ 1/2 teaspoon of salt
~ 100g cheddar cheese or gruyere
Execution:
~ Preheat the oven to 180C.
Line a baking tray with non-stick paper.
Put the beans in the colander, rinse them and let them drain.
Bring the water to a boil, add the quinoa and simmer for 10-15 minutes until the water is absorbed. Remove the pot from the heat and allow the quinoa to cool while you prepare the rest of the ingredients.
Puree the beans in a food processor.
Add the tomato paste, bread crumbs, parsley, thyme, garlic, honey, hot sauce, salt and pepper.
~ Mash all the ingredients and add the mixture to the quinoa pot.
Knead well with your hand.
Cut the cheese or gruyere into 35 small pieces.
Take a large spoonful of the mixture and press it into the palm of your hand to spread it out. Put a piece of cheese in the middle and close it as if you were making meatballs.
~ Place the balls in the baking pan and bake at 180C for about 25 minutes.
~ You can accompany them with a salad or put them in an Arabic pita with yoghurt, chopped pickled cucumber and lettuce.
